## The Orange Buffalo

These hot wings are certainly not for the faint hearted, with one dish on the menu famously called the Viper. If your mouth is on fire order their chips covered in blue cheese. You might want to warn your date their fingers might get a bit sticky, but these wings are worth the mess!

*When it comes to organising an event there can be so many moving parts that it be so easy to let something absolutely vital slip through net and find yourself scrabbling around to make sure that it all comes together at the last minute. 

*In the interest of making the planning process easier for everyone, __Feast It__ spoke to Abby, an event organiser at one of the UK's largest charities. She is involved in the organisation of around 20 large events per year so it's safe to say she's been through it all!
*

__*Hi Abby. So what are the very first steps that you take when going about starting to organise an event?*__


First of all, I work out the exact budget and try to identify areas where it could be possible to cut costs if necessary. Once that’s been established, firstly I’ll secure an awesome venue, secondly I’ll source the catering and then get cracking with selling tickets!

 
__*What are the three most important things to get absolutely spot on? (eg. catering, venue, entertainment etc)*__

First and foremost, it’s the venue because quite clearly without one there’s simply no event at all! Then it’s catering, the quality of which tends be a fairly direct representation of how much people will enjoy themselves, and I’ll also make sure that there won’t be any problems with accessibility at all, it’s one that people often tend to forget.

__*In what area do you tend to encounter the most problems when you're organising an event?*__

I work at a charity and the emphasis is on trying to keep costs as low as possible, whilst simultaneously delivering an enjoyable and high quality event that guests will remember and hopefully continue to support in the future. Although not a problem per se it is the ongoing challenge across the sector!

 
*__Is there one thing in particular that people tend to forget?__*

People can just be so busy they generally forget to send over their dietary requirements, meaning you need contingency plans on the day and caterers who are able to offer a bit of flexibility.

*__Would street food be an appealing option for a charity event? __*

It would be a really nice touch. Guests absolutely love to try something fun and different and street food allows you to be more creative and add a bit more diversity to proceedings. The fact that you can cater cheaply for multiple dietary requirements is also hugely appealing.

 
*__Do you have any stories of when things have gone wrong? __*

I once got locked in a dressing room with an unhappy celebrity compère for 20 minutes whilst I was meant to be managing an event! Not the best start to an evening!

 
__*What food do you personally think tends to go down the best at events you've organised?*__

I always try and choose something a bit unusual as people generally get a bit tired of standard dishes, particularly vegetarian options (I'd never pick the risotto) Recently I've found duck to be a popular choice and people tend to be moving towards more niche options. And everyone loves a chocolate pudding!

What to remember when planning an event

*__Chris Evans is the founder of Sticky Bundits, a street food stall serving innovative tasty sushi burgers at markets across London. Back in 2015, him and partner Munish decided to ditch the day jobs and they've been cooking up some of the most interesting 'burgers' you'll find ever since! We caught up with Chris for a chat about the inspiration behind his decision to get started in street food and picked up a few tips on how to get into the scene__.*

__*Hi Chris, so what inspired your decision to go into the world of street food?*__

I had been a Primary School Teacher for 10 years and was looking for something different. I'd always wanted to run a business and  food seemed the obvious choice. Street food was even more obvious given its democratic nature and relatively low setup costs. 

*__Why did you specifically choose sushi burgers?__*

I wanted to do something unique and remembered the rice burgers from when I lived in Japan. I hadn't seen them over here so it was the perfect choice. Coincidentally 6 months later 'sushi burgers' became a new food craze in the US, which helped us to ride a wave. Our two main dishes are based on my favourite dishes from my travels in Japan and Vietnam.

*__What are the most important things to bear in mind for chefs looking to get into street food?__*

Keep it really simple and be able to explain what you do in about three words. Whatever you decide to do, make it the best. Seek out the best recipe or combination of ingredients/components or just something that hasn't been done before in the UK. I wish I'd known that there are plenty of opportunities out there and you should never get fixated on one market or opportunity.

*__Why do you think that the London street food scene is thriving to such an extent at the moment?__*

Street food is opening people's minds to food from all over the world and each trader has put their heart and soul into basically one dish. You can taste that passion in the food so if you go to a place where there is street food, you can expect (on the whole) quality.

__*Are there any other food trends that are particularly exciting you at the moment?*__

I'm trying to look at my sugar intake at the moment so I'm inspired by the ways people are replacing it in recipes. I've taken it out of our rice buns and half of the menu, with no noticeable difference to taste. I think this is one of the most important food-related issues we face.

*__Do you have any street-food related funny stories?__*

I have a tragic one. The first time I ever used a prep kitchen, I had no clue what I was doing and was on my own. The only slot I could get was an evening/night shift and I'd never cooked in such quantity before. The first few hours was spent figuring out how to use the new-fangled equipment. Then I got stuck into the food and the hour hand kept spinning away. I was panicking as I had a day of supply teaching the next morning yet there was so much to do....rice buns to press, meat to cool down and the kitchen was a tip. At 4am I conceded that I was not fit to teach so made up something about kidney stones and sent the required text. At 6am the kitchen was vaguely clean except for random rice grains encrusted about the place, so I went to reload the car. That's when I realised that my car was blocked in, in the tiny car park. There was no way I was getting out so I had to kip on a mouldy sofa outside the kitchen door until someone came in at 10am.

*__What's the best tip you ever received?__*

Think outside the box when trying to get street food markets to give you a pitch. Emails are a waste of time.

*__And finally, what's the most delicious thing you've ever tasted?__*

Too many to mention, so I'll try a few......Mole in Mexico, Bun Cha in Hanoi, Okonomiyaki in Japan. Closer to home, the best roast I've ever eaten was made by Gaz from [Sub Cult](https://feast-it.com/vendors/sub-cult?date=2017-03-10&postcode=sw25hg&cuisine[]=Sandwiches) in one of their pub residencies.

If it's a classic grilled cheese sandwich you're after, you could do no better than to get yourself along to the quite extraordinary Cheese Truck. They serve delicious free range British cheeses in gooey sandwiches from their 1978 Bedford CF truck, who happens to be called Archie. You can catch them and their amazing sandwiches at Maltby Street Market every weekend through January and February.

Kimchinary serve totally original and totally delicious Korean Burritos from a converted 1974 converted milk float. The amazing Hanna Soderlund got everything started after a trip to South Korea, with the initial plan to focus on samgyeopsal, a traditional dish. Trial, error and London weather eventually developed these into burritos, and a year in California helped to perfect them. Now they're available with fillings of beef, chicken, pork and aubergine and you can find them trading at Kerb's West India Quay Market from February.

London's masters of the street food sub, the guys at Sub Cult serve their New York-inspired delicious sandwiches from the amazing Soul Roller, a beautiful vintage Renault Estafette. At the end of 2015 they won both best sandwich and the best vegetarian option at The British Street Food Awards and you can find out why at Broadgate Circle on Wednesday, Leather Lane on Thursdays and Fridays, Brockley Market on Saturday and Maltby Street on Sundays.

Kalimera and their beautiful van are on a mission to contemporise Greek gastronomy for the streets of London. They’ve selected the dishes that you might tend to associate with the cuisine (moussaka, souvlaki etc) and given them a modern, and most importantly delicious, twist. Telemaque Argyriou, the fabulous creator of Kalimera, is on par with the top, top chefs in London and is a prime example why you’ll find all the best food on the streets these days. You can find them trading at Broadgate Circle on Mondays and Fridays. 

__Engine Hot Dogs

Engine serve outrageously delicious American-style Hot Dogs from a vintage fire truck, using handmade double-smoked sausages, locally baked artisan buns, homemade toppings and smokin' hot sauces. The fire truck itself is a bit of a celebrity on the British street food scene. Born in 1959, she began life as a fire engine near Paris and saved a whole load of lives right up until 1995, but has now reverted to saving souls with saucisson! They work at Kerb markets across London.

Not strictly a food truck as such, but Born & Raised serve some of London's most delicious pizza right from the back of their Land Rover Defender. They use only the most freshly made dough and exclusively work with British produce to ensure that their pizzas are as good as you'll find in the whole of the capital. Our aim was to build a platform designed by event organisers for event organisers that will streamline the complicated (and rather boring) process of booking the perfect event caterer and, we've got to say, we’re pretty happy with what we’ve built, hopefully you agree!

Working in partnership with over a 100 of London’s leading street food vendors and restaurants including Patty & Bun, The Breakfast Club, Dirty Burger, Blu Top Ice Cream, Hummus Bros, and The Cheese Truck, Feast It is a platform enabling event planners and businesses to discover, compare and book their ideal caterer for any event in a matter of minutes, all on one site. 

Outside of a booking platform we also offer a bespoke curation service for anyone looking to organise something a little more complicated or new to event organising and in need of some hand-holding. We’re working with everyone from major global brands, large festivals and small restaurants looking for their next cool chef residency, if you’ve got an idea involving street food, we want to help!

We’ve worked in events and festivals for years and really wanted to create a platform that would take as much of the hassle out of organising events, as well as celebrate London’s incredible independant culinary scene. The process of booking catering hasn’t really changed over the last 10 years; it’s needlessly labour intensive and almost impossible to find the full range of food that’s actually available when you need it. We wanted to create a platform that helps people realise the amazingly diverse and delicious options available to them as well as book event catering from the chefs they already love!

We’re launching into an exploding UK street food scene  at time where London really is the global capital of food! In the long term we want to start partnering with leading craft breweries, entertainers, and other suppliers to offer a platform that will let users book everything they need for their next party or event but always whilst maintaining a policy of only working with the crème de la crème of suppliers. 

We can’t begin to explain how excited we are to be able to partner with so many incredible and well known suppliers from day one. Ultimately we truly believe that street food catering is a more diverse, exciting, and tastier option than traditional ‘silver service’ catering and we can’t wait to help people realise that on average it’s a quarter of the price per head. We really hope that Feast It can help people find the perfect food for their special event and take out all of the legwork that usually comes with that!

The concept of the little old hot dog has come a hell of a long way over the last few years. You shouldn’t be thinking of greasy, poor quality frankfurters in cheap, doughy buns with a few stringy onions thrown on top. This is 2017 and we’re over the wurst! Hot dogs are at the pinnacle of all that’s delicious and decadent about the London street food scene; now a dish to be eaten with… relish, rather than guilt.

As much as I love them, I have to admit that I have been pleasantly stunned by just how excited people get over my very own Big Apple Hot Dogs. I have catered for Tom Cruise, Lily Allen and supplied Heston Blumenthal - all because of our ‘sausages that make you smile’! There are other incredible people doing a great job with hot dogs across London if you’re looking for your sausage fix.

Dogs are the perfect grab and go food, but they’re wonderful to cook up at home whether that be for a BBQ with friends or just as a meal for yourself.

Here are my top tips for cooking up your own dynamite dog at home:

__Quality is paramount
__

Start with a pedigree dog - this means a high real meat content (80%+).  We personally use UK pork shoulder or beef trim and I couldn’t recommend them any more highly. The sausages should also have natural casings, to give them that all important ‘snap’

__Artisinal manufacturing techniques__
 
If you want to get the most out of your hot dogs, you’ll want to smoke them over real wood chips or sawdust and make sure they’re not dipped in liquid smoke.

__Nice buns__

The pedigree of the bun makes an enormous difference. Order fresh white finger rolls from your local bakery, ideally. Even low quality, slightly old buns can be massively improved by steaming, or you can butter the insides then toast by pressing them down on a hot frying pan.

__Cooking__

Getting this right is key. The goal is to retain all the succulence, whilst achieving a crispiness to the natural casing so that when you bite into it there is a snap, then a flood of intense, meaty joy.

The trick is to heat them through gently (to no more than 65 degrees C) in a skillet with a dash of oil, or grill on medium heat for 3-5 minutes on each side.

A high level of tumescence (in the sausages) indicates they are ready!

__Imagination
__

Some purists insist on eating our dogs with no condiments at all. Others insist that anything apart from mustard is sacrilege. We at BAHD are a broad church though, and know a lot of fun can be had loading the dogs with anything at hand that tickles your fancy. For example you could wrap the dogs in streaky bacon before cooking, or top with leftover chilli and add diced onions.

An offering from the wonderful Grace at Spicebox, cooking up some of tastiest curries in London with absolutely no animal fats, sugar or general nastiness at all. Spicebox's offering is the 'Crimbo Curry', a rich tomato curry sauce with an Xmas spice mix of cloves, cinnamon, cumin and peppercorns, packed with brussels sprouts, roast squash and, best of all Christmas stuffing kofta balls.

You can find this for one day and one day only at the Kerb Xmas Charity Market at the Gherkin on the 22nd of December.

The jerk chicken geniuses have gone down the devilishly delicious desserts route for their Christmas special this year. They've created a decadent Jamaican rum cake and, for good measure, thrown a dollop of rum ice cream on top. Basically, if you like rum, this is the best thing you'll ever taste...

You'll find them at the Street Food Union market in Soho until Friday, and at Kerb markets in Kings Cross and West India Quays markets between Wednesday and Friday.

So, you're thinking of setting up your very own street food business? You’ve got grand plans to serve incredible food to eager, salivating customers, happy to queue at your stall whatever the weather to buy your culinary creations to great acclaim and joyful feedback.

The good news is you can do this! And do it you will if you’ve got the belief, the desire and just that little bit of nous to got with it! However, it’s really difficult to get started without some essential behind the scenes tips of the industry, invariably involving a roll of gaffer tape, a chalk pen and an endless supply of cable ties. Here’s a potted list of the multi-tasking skills that you’re going to need if you’ve got plans to run a street food stall:

1.Appreciation of the Weather: It's an obvious one to start with, but you’ll become absolutely obsessed with the Met Office app. Wind is worse than rain, humorous though it is to see a gazebo fly through the air magic carpet style this is obviously a danger to the public. Make absolutely sure that you put weights at the feet of your gazebo before you do anything else. Cable ties can often be a godsend here. You’ve got to remember that bad days with the weather are just an inevitability, and the it’s the street food chef’s job to be able to cook through them!

2.Jack of all, each and every trade: You’re going to need to be an electrician (cable ties) plumber (gaffer tape) sign writer (chalk pen), accountant, gas engineer, mechanic, social media expert, carpenter, chef, kitchen porter, weight lifter, "Jenga" van packing expert, van driver, and need a large capacity for alcohol consumption (not while driving obvs). It’s incredibly hard work but the upshot is that you suddenly realise that you’re qualified for about fifty jobs when all you wanted to do was to be a chef.

3.A (very) cheery disposition: Street food traders love a good old moan to each other, but are salt of the earth and eternally optimistic to their customers. This is a skill not to be underestimated and, in a world where online reviews are becoming more and more important, increasingly vital to your business. No matter how tempting it may be (and it will be very tempting at certain points) always resist the temptation to go Basil Fawlty on the general public.

4.The show must, must, must go on: Even if all the wheels fall off your van, you are struck by lightening and your cat has died that very morning, you must, must, must still turn up at the market or the event. Street food isn’t a great place for people who tend to call in sick a lot.

5.The food. Almost not worth mentioning because obviously it needs to be amazing. It's worth remembering that the whole package is incredibly important; taste, presentation, originality. As general rules: less is more, forge your own path, don't copy anyone else's stuff...(doesn't go down well). Do one thing and do it really well.

Frankly the streetfood adventure is the best use of gaffer tape, cable ties and chalk pens you could ever possible think of. Go for it.
