The Vaporetto team prepare and cook phenomenal Neapolitan pizzas from their custom built VAP #1 Truck. The truck features a state of the art integrated sound system and mixer to guarantee the queue are dancing while they wait for their pizzas to cook in their hand-built wood-fired oven.
At Vaporetto, they do things differently and it all starts with the dough, which they make in-house every day in Hampshire, using Caputo flour from Naples to create a dough that is 48-hours fermented and full of flavour; light, lean, hydrated and seriously tasty. Their tomatoes are world-class San Marzano DOP and they only use imported Fior di Latte and Mozzarella di Bufala DOP from Campania to make their classic Vaporetto Margheritas.
The key to phenomenal flavour is in the amazingly fresh ingredients. Once prepared, the pizzas are blasted at a fiery 450+ degrees for just 60 to 90 seconds. A fully staffed truck can make 80-100 pizzas in an hour. The recipe is from Naples, the ingredients are from Campania and the passion is all James's own.
